Baking Chocolate Chip Cookie Dough Cupcakes - C/LO1

Today I made chocolate cookie dough cupcakes in a virtual baking class hosted by a Post Oak Student. I am a huge fan of baking and have made all kinds of cookies, cakes, and pies but haven’t made many cupcakes before. Because these cupcakes were stuffed with cookie dough and iced, I had to essentially make three different components and each required several different bowls. I first made the cookie dough filling and even had extra to bake into actual cookies. I then made the cupcake batter and lastly the frosting. I consider myself a pretty good baker, but this definitely involved more steps than my usual bakes. However, the final product was delicious!

CAS Project Day 30 - LO1

Today is the last day of my CAS project. I went to the climbing gym as usual and started with several easier warm-up climbs. I then went to a new V5 climb that I had started yesterday with my sister. This route was newly set last week so there were many people crowding around it. I watched a few people try it from afar and even tried it myself once but there were so many people then that I didn't get a real shot at it. I came alone and really early in the morning so I was very happy to find that the wall was open for me to climb. Because the start of this climb is so high up, I have to prop my right feet on the hold almost at my shoulder height and slowly push upwards and into the wall to straighten my leg without accidentally pushing off the wall. This climb requires a lot of slow and controlled movements and also a lot of trust in your feet for the finish. Hiking in Yellowstone - A/LO1

This summer my family visited Yellowstone National Park. We did lots of hiking while we were there and even some swimming. One of my favorite hikes and also one of the longest ones was the Grand Canyon of Yellowstone hike. My family and I did a trail that ran adjacent to the canyon and offered fantastic views of the river below. This hike was made more challenging because of the steep incline and high altitude. The hike itself was several miles so it took almost all morning. I love hiking and am generally a very active person so the incline was very manageable. I do tend to let myself get overheated in the summer and sometimes forget to drink water so an area that I could stand to grow in is not overdoing it and make sure to stay hydrated.

Hand Knitting Chunky Blanket - C/LO1

As a weekend craft, I decided to make a chunky knit blanket following a youtube tutorial. I had recently started knitting but had not yet tried hand knitting. I used the Bernat chunky blanket yarn and was able to follow the tutorial easily enough. I struggled with getting the right tension at first and naturally, as a perfectionist, I had to redo the beginning multiple times until I got it just right. I put on a movie and sat for three hours on the floor just working on the blanket. In the end, I had my very own chunky blanket. Through this process, a strength I demonstrated was perseverance with working through new skills and a weakness that I could work on is being more forgiving for slight imperfections.
